Crinkle cookies are always a delicious treat any time of year and Valentine’s Day is no exception.
Easy to make and affordable, these easy cookies only take a couple of ingredients.

Easy Strawberry Cake Mix Crinkle Cookies

Vegan Ingredients: (shown above)
- 1 Box Strawberry Cake Mix
- 2 Flax eggs
- 1⁄3 C. Vegetable Oil
- 1⁄2 C. Powdered Sugar
How to Make Flax Eggs for Vegan Recipe
In a small bowl add 2 tablespoons ground flax seed and 6 tablespoons water, set aside for 10 minutes.
Non-Vegan Ingredients:
- 1 Box Strawberry Cake Mix
- Eggs (Use number specified on box mix)
- 1⁄3 C. Vegetable Oil
- 1⁄2 C. Powdered Sugar
Notes: Additional oil may be needed according to box directions. Some strawberry cake mixes call for 1⁄3-1⁄2 C of oil. Use the amount of oil specified on your box mix instructions.
Directions:
To get started on these Cake Mix Crinkle Cookies, you will want to preheat the oven to 375 degrees.
Line two cookie sheets with parchment paper and set aside.
In a medium mixing bowl, you will want to add your cake mix.
Add in either your eggs or flax eggs (depending on which version of the recipe you are making) and mix your ingredients together.
Add in your oil.
Mix the dough thoroughly until it is well combined.
Using a 2 tablespoon cookie scoop, form a dough ball.
You will want to form 18 dough balls which makes 18 cookies.
Place each dough ball of your Cake Mix Crinkle Cookies in powdered sugar, roll around each cookie until they are completely coated.
Place powdered sugar dough ball back onto the prepared parchment paper,
Continue to cover the rest of your cookie dough balls with powdered sugar until all are coated. Leave enough room between the cookies for them to expand during baking.
Bake in the pre-heated oven for 15-17 minutes until the cookies are puffy, dry, and the powdered sugar has cracked.
Enjoy immediately. Store any leftovers in an airtight container.

- Using a 2 tablespoon scoop, form a dough ball, place on prepared parchment paper line cookie sheets. Form 18 dough balls.
- Place each dough ball in powdered sugar, roll around until completely coated.
- Place powdered sugar dough ball back onto the prepared parchment paper, continue to cover the rest of the dough balls with powdered sugar until all 18 are coated.
- Bake in the oven for 15-17 minutes until puffy, dry, and the powdered sugar has cracked.
