Ingredients
- 2 store bought pie crust
- Preserves (or another favorite filling)
- Cookie cutter (we used a Mickey cookie cutter, but feel free to use whatever you have)
For the cookies we made here, we used store bought pie crusts. Feel free to use your favorite pie crust recipe.
If you are using up leftover pie crust, just use the amount of dough that you have.
Instructions
To get started, you will want to preheat your oven to 375 degrees.

Roll out your pie crust and cut out shapes for your cookies.

You will need 2 pieces for each pie crust cookie.
There will be a top and a bottom for every cookie. Cut slits on the top piece as shown.

On the bottom, spoon on the preserves (or another favorite filling) and add the top piece to your pie crust cookies.
Add filling to the bottoms of every cookie. Then add on the tops for your cookies.
Around the edges of your cookies, use a fork to press the two pieces together and to seal in the fillings.

Bake for 15 – 20 minutes. Keep your eye on them and do not allow them to burn.
These cookies can be eaten plain or with your favorite dipping sauce, such as caramel sauce, chocolate sauce, or ice cream.
They are also a great dessert to serve at a gathering or to pack in your lunchbox.
