They are the perfect twist to this popular homemade treat recipe for fall fun and a great addition to Halloween parties, cookie swaps, holiday meals or any other occasion. Here’s how to make them!
No Bake Pumpkin Cookies

To make these cookies, you will need canned pumpkin, peanut butter, quick oats, butter, milk, brown sugar, white granulated sugar, vanilla extract, spice, cinnamon and salt.

In a medium saucepan, you’ll want to add the canned pumpkin, peanut butter, milk, butter, brown & granulated sugars.
Bring the mixture to a boil over medium heat while stirring.
Once it is boiling, reduce the heat to low.

Add the vanilla and let simmer for 3-5 minutes while stirring occasionally.

While your cookie mixture is cooking, use a large mixing bowl and mix together your cinnamon, salt and spice with the oats.

Slowly pour the mixture into bowl with the oats. Be sure to mix everything well.

Line a baking cookie sheet with parchment paper and use a spoon to shape the oats mixture into 2 inch sized cookies.

Let your treats fully cool before serving.
Store your leftovers (if you have any!) in an airtight container.
