Oh, baby, it’s hot outside! It’s 96 degrees in the shade here in Iowa and with our air conditioner on the fritz and our new one is not able to be installed until next week, we are seeking all things cool here at Two Kids and a Coupon. Fans, cool drinks, cool foods and there is NO way in heck I’m touching my oven until I have a cool house again in a few days.

Fortunately for us, there are still lots of ways to have great treats, even when you don’t want to bake. One of our family’s favorite cookies, NILLA Wafers, and NILLA Wafers Lemon are a great solution when you want a quick treat without turning your oven on in the hot summer months. Available at your local Walmart, they’re great for endless amounts of delicious summer recipes at home or for parties, no matter what the occasion.

Since we’re seeking cool here at Two Kids and a Coupon, we decided to go with something frozen, and one of our favorite treats is to freeze bananas and make our own homemade version of “nice” cream. This week we made NILLA Wafer Banana Nice Cream Sandwiches and they were delicious. Here’s how to make them!

Nilla Wafer Banana Nice Cream Sandwiches

3 bananas
1/2 cup water
Blender
Plastic baggie
1 box NILLA Wafers

1. Peel bananas and place in a plastic baggie. Put in freezer for an hour or two until frozen.

2. Remove bananas from freezer and place in blender with 1/2 cup water. Blend until you have the texture of ice cream.

3. Place NILLA Wafters on a plate and fill with banana nice cream. This can be done with a spoon or piping bag. Add NILLA Wafer top and freeze until serving.

For thicker sandwiches, repeat two or three times to add height to the sandwiches, then add the tops of the sandwiches with NILLA Wafers and freeze until serving.

4. Serve on a hot summer day!
