With school back in session, mornings have gotten crazy again around here. Even though our summer days were filled with summer activities and day camps, school always seems to make things so much busier, and now that we’re back into our fall routine, we’re still racing through the mornings trying to make sure everything is in place. One of my big morning goals is to make sure everyone gets fed before they leave the house. Muffins are always one of my personal favorites for back to school time because they’re perfect to grab and go when you’re headed out the door.

If you’re looking for a great new recipe to try, these lemon chia seed muffins are sure to be a hit with everyone in your household.

 

Lemon Chia Seed Muffins Ingredients

 

 

To get started, preheat the oven to 400 degrees and spray a muffin pan with nonstick spray or use muffin liners.
Next, in a large bowl, whisk together the dry ingredients including flour, baking powder, baking soda, and salt. Then whisk in the sugar until combined.
In a smaller bowl whisk the eggs and add the milk, vanilla, and the oil, then combine to the dry mixture.
Mix in the lemon zest and the chia seeds.
Pour or scoop the batter into your muffin pan filling the cups 3/4 of the way.
Bake the muffins for 14-16 minutes or until an inserted toothpick comes out clean
