How are your New Year’s resolutions coming?

Since healthy eating is on the menu for so many of us this time of year, I thought I’d share an easy Shrimp Parmesan Salad recipe that takes only minutes and is a super easy weeknight meal or great healthy lunch.

 

Popcorn Shrimp Recipe
Ingredients
  • 1 20 oz package SeaPak® Popcorn Shrimp
  • 1 bag baby spinach salad
  • 1/3 cup sweet vinaigrette dressing (We love Hendrickson’s Original – add more or less depending on tastes)
  • 1 apple sliced
  • Fresh Grated Parmesan Cheese
  • Candied Pecans or Walnuts
Shrimp Salad Recipe
Instructions: 
  • Preheat oven to 450 degrees.
  • Prepare shrimp to package to instructions.
  • Slice the apple and cut into bite-size pieces.
  • Grate Parmesan cheese. For long thin slices like shown in the photo, use a vegetable peeler for best results.
  • Add spinach to a large bowl and toss with the desired amount of vinaigrette dressing.
  • Top with shrimp once cooked as instructed. Add apple, cheese and sprinkle as desired with candied pecans or walnuts for a little extra sweet.
  • Enjoy.
