Cooking With Kids – Hippity Hoppity Bunny Cupcakes

Although we’re still buried under snow and sub-zero temps here in Iowa, we’re at least dreaming of warm weather, sunshine, grass and Easter fun heading our way!  We’re looking forward to moving into a new home here at Two Kids and a Coupon and also to hosting our very first Easter gathering with our family and friends coming to our house for an Easter egg hunt. I’ve been checking out fun ideas for sweet Easter treats and one of our Two Kids and a Coupon contributors this week was clever enough to provide me with these super cute bunny cupcakes that are almost too adorable to eat. Here’s how to make them!

 

Ingredients & Supplies

  • White Cake Mix
  • Butter cream icing
  • 3 Cups Confectioners (Powdered sugar)
  • 1 1/4 cups butter
  • 1 Tsp. Vanilla Extract
  • 2 T. Vanilla Creamer
  • Conversation Hearts (look for Valentine’s Day Clearance!)
  • Blue Sprinkles
  • Pearlized White Sprinkles
  • Cupcake Liners
  • Mounting Tape

 

Ingredients & Supplies

To make these cupcakes, use white cake mix and addvanilla pudding (it just makes it a little more dense, but they do not rise as high.) Along with the normal package directions. If you do not add the pudding, just fill the cupcake liners about 2/3 full so you can have a nice flat surface for the face. Blend sugar and butter, then whip for 3-4 minutes. Once you have small pebble size chunks, add your vanilla and creamer. Mix for about 2 more minutes.

After you frost your cupcakes, lightly sprinkle the top of the frosted cupcake with powdered sugar for a “furry” look.  The eyes are blue dot sprinkles, the nose is a pink conversation heart, the whiskers are pearlized white long sprinkles.

The ears are 1 standard white cupcake liner and 2 pink mini cupcake liners.  To make them, elongate the white one and tape down the pink mini liners inside the white liner and tape around the center. Use thick double sided tape to hold the ears to the cupcake.
