Cooking With Kids – Easy Make Cornbread Cake

If you’re looking for something new to add a little flavor to your family’s menus, or a yummy new addition to cold weather soups or stews, one of our family’s latest favorites is Cornbread Cake. I tried this recipe out after we enjoyed a sweet, cake-like cornbread at restaurant and it’s been a regular request from my husband and kids ever since.
This is a easy to make treat and with a low cost of less than $3 to make even without coupons, it’s an affordable side to any meal. You might even have the ingredients on hand at home already!


  • One box cornbread mix (I use Jiffy, but any kind works)
  • One box yellow cake mix (any brand works, whatever is affordable)
  • Whatever additional ingredients that the 2 mixes call for on the box (milk, water, oil, eggs, etc.)
  • Butter or butter spray


  • Preheat oven to 350.
  • In a large mixing bowl, add both mixes and stir in any additional ingredients that they might call for individually (like eggs or milk and combine together. If one mix asks for 2 eggs and the other mix asks for 1 egg, mix in 3 total eggs).
  • Stir mixture until smooth, and pour into greased pans. This recipe works with muffin tins, cake pans or bread pans. Make it using whatever you have on hand or whatever you prefer. I like it in all kinds of pans, but my family’s favorite is cooked in mini-loaf bread pans and then sliced like pound cake.
  • Bake at 350 until golden brown or until a toothpick inserted comes out clean. Length of time varies depending on the pan you use. For best results and additional flavor after baking, brush tops and sides with butter or spray with butter spray. Serve warm with honey, butter or whatever else tastes good.
Note: Since this makes a combined equivalent of a whole batch of cornbread AND a whole cake, it does make a considerable amount for most smaller families than what can be eaten in one meal. This does keep well for several days if you store in an air tight container. Just microwave servings for a few seconds until warm. It is a softer texture than cornbread, so spreading butter is a little tougher, but this is delicious even without butter added and great with soups and chili.

  3. I have never heard of Cornbread Cake, but this sure looks so delicious and easy to make. I love cake and cornbread and combining the two makes is sound so interesting. I will have to make this for my family. I know they would love it!
