With 2 kids, a full time job, a house, a husband and a blog, there’s not a lot of extra time for cooking at our house. One of the challenges that also make meal times more difficult is that I’m a vegetarian and that my family isn’t, which means we often have to have 2 separate versions of the meals we make. I’m always on the lookout for new quick and healthy meal options that allow us to eat well, but don’t take a lot of time and I was recently asked by the folks at Minute® Rice to try come up with a quick and easy recipe.
One of my favorites that my family doesn’t care for is fried rice. I don’t make it often since I’m the only one that eats it, but I was thrilled to find these handy single serving size containers of Minute Rice where I could make just enough for me. Last night I had a quiet house while my stepdaughter was gone at her moms and my husband and son were at the circus, so I decided to try stir up some fried rice just for me to enjoy. Here’s how to make it.
Easy 4 Ingredient Fried Rice
Ingredients:
- 1 Egg
- Soy Sauce
- Minute Rice Ready to Serve Brown Rice
- Can of Mixed Veggies
Instructions:
- Scramble egg in skillet
- Add in rice, 1/2 of a can of mixed veggies and soy sauce (amount depends upon tastes)
- Stir fry until warm
- Enjoy!
